Description

A delightful summer recipe with juicy chicken infused with honey and fresh oranges. Perfect for weeknight dinners or gatherings.


Ingredients

  • 2 pounds boneless and skinless chicken breasts or thighs
  • ¼ cup coconut aminos or soy sauce
  • ¼ cup fresh orange juice
  • 2 tablespoons honey
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • Zest from half an orange

Instructions

  1. Whisk together the coconut aminos (or soy sauce), orange juice, honey, ginger, salt, garlic powder, and orange zest in a bowl.
  2. Place the chicken in a resealable bag or dish and pour the marinade over the top. Seal and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and let the excess drip off. Discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side or until cooked through (the internal temperature should reach 165°F).
  6. Allow the chicken to rest for a few minutes before slicing and serving.

Notes

For a different flavor, try pineapple juice instead of orange juice or add diced jalapeños to the marinade.
