Description

Succulent grilled chicken thighs drizzled with a vibrant chimichurri sauce, perfect for any occasion.


Ingredients

  • 4 chicken thighs
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Make the Chimichurri Sauce: In a bowl, combine chopped parsley, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Mix well.
  2. Reserve for Serving: Set aside half of the chimichurri sauce to serve later.
  3. Marinate the Chicken: Coat the chicken thighs with the remaining chimichurri sauce, ensuring they’re well covered. Let them marinate for at least 30 minutes.
  4. Preheat the Grill: Set your grill to medium-high heat and wait until it’s nice and hot.
  5. Grill the Chicken: Place the marinated chicken thighs on the grill. Grill for about 6-7 minutes on each side, or until they’re fully cooked.
  6. Serve with Sauce: Once done, plate the grilled chicken and generously drizzle with the reserved chimichurri sauce.

Notes

Marinate longer for better flavor. Serve with grilled vegetables or a refreshing salad.
