- 4 chicken thighs
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Make the Chimichurri Sauce: In a bowl, combine chopped parsley, olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Mix well.
- Reserve for Serving: Set aside half of the chimichurri sauce to serve later.
- Marinate the Chicken: Coat the chicken thighs with the remaining chimichurri sauce, ensuring they’re well covered. Let them marinate for at least 30 minutes.
- Preheat the Grill: Set your grill to medium-high heat and wait until it’s nice and hot.
- Grill the Chicken: Place the marinated chicken thighs on the grill. Grill for about 6-7 minutes on each side, or until they’re fully cooked.
- Serve with Sauce: Once done, plate the grilled chicken and generously drizzle with the reserved chimichurri sauce.
Notes
Marinate longer for better flavor. Serve with grilled vegetables or a refreshing salad.
