Description

A delightful Mediterranean side dish featuring zesty lemon, garlic, and herbs, perfect for pairing with a variety of main courses.


Ingredients

Scale
  • 1 cup long-grain white rice (or basmati)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2¼ cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley
  • Optional: fresh dill, crumbled feta cheese

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and cook for about 3-4 minutes, or until it becomes translucent.
  3. Sauté the minced garlic for around 30 seconds until fragrant.
  4. Stir in the rice and toast it by cooking for 1-2 minutes, allowing it to absorb the flavors.
  5. Pour in the broth and add the oregano, salt, and pepper. Stir well and bring to a boil.
  6. Reduce the heat to low, then cover and let it simmer for 15-18 minutes, until the rice is tender and all the broth has been absorbed.
  7. Remove from heat and stir in the lemon juice, zest, chopped parsley, and fresh dill if desired.
  8. Fluff the rice with a fork, garnish with crumbled feta (if using), and serve warm.

Notes

Can be easily made vegan by using vegetable broth and omitting feta.
