Description

A delightful twist on classic cupcakes, combining the nostalgic flavor of grape soda with a fluffy cake base.


Ingredients

  • 1 white cake mix
  • 1/2 cup vegetable oil
  • 4 egg whites
  • 1 ¼ to 1 ¾ cup grape soda
  • 1 box grape Jell-O
  • Food coloring (optional)
  • Cupcake liners
  • 2 sticks softened salted butter (for frosting)
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 4 cups powdered sugar
  • 1 tablespoon half-and-half or milk
  • 2 tablespoons grape soda (for frosting)
  • Extra grape Jell-O (optional)
  • Food coloring (optional)
  • Piping bag and tip
  • Straws
  • Purple sanding sugar (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and place cupcake liners into your cupcake pan.
  2. Combine the egg whites, grape soda, and vegetable oil in a mixing bowl. Mix on medium until thoroughly combined.
  3. Fold in the white cake mix gradually until the batter is smooth and all ingredients are well incorporated.
  4. Add about 1/2 to 3/4 of the grape Jell-O and a few drops of food coloring if you desire a brighter hue. Mix well, adjusting the Jell-O amount to your taste.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow the cupcakes to cool completely before frosting.

Notes

For best results, ensure ingredients are at room temperature before mixing. Customize flavors with different soda or Jell-O.
