Description

A rich and flavorful Gochujang Sweet Potato Soup that balances sweetness from potatoes with a savory kick from gochujang, perfect for any occasion.

Ingredients

Scale
  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon gochujang (adjust to taste)
  • 1 teaspoon ginger, grated
  • 1 can coconut milk (13.5 oz)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)
  • Lime wedges, for serving (optional)

Instructions

  1. Prepare the sweet potatoes: Begin by peeling and cubing the sweet potatoes into small chunks.
  2. Sauté aromatics: In a large pot, heat the vegetable oil over medium heat. Add the diced onion, cooking until it turns translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add sweet potatoes: Toss in the cubed sweet potatoes and stir to blend them with the aromatic mixture.
  4. Pour in broth: Next, add the vegetable broth and bring everything to a boil. Reduce heat and let it simmer for about 15-20 minutes, or until the sweet potatoes are fork-tender.
  5. Incorporate gochujang: Stir in the gochujang, starting with 1 tablespoon. Taste and adjust according to your heat preference.
  6. Blend the soup: Use an immersion blender to blend the soup until smooth and creamy.
  7. Finish with coconut milk: Once blended, return the soup to the pot and add the coconut milk. Stir well and warm for another 2-3 minutes. Taste and season with salt and pepper.
  8. Serve: Ladle the soup into bowls, garnish with fresh cilantro if desired, and serve with lime wedges for a zesty touch.

Notes

Adjust the spice level with gochujang to suit your taste preference. This soup pairs well with crusty bread or a simple green salad.
