Description

A warm and comforting bowl of quinoa with fragrant garlic and savory mushrooms, perfect for weeknight dinners and brunches.


Ingredients

  • 1 cup quinoa (cooked)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 pound cremini mushrooms (sliced)
  • 5 cloves garlic (minced)
  • 1 tablespoon thyme leaves
  • 1/4 teaspoon dried red chili flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Cook the quinoa according to package instructions. Once it’s ready, set it aside.
  2. Combine the olive oil and butter in a large sauté pan over medium heat, letting it melt together.
  3. Add the sliced cremini mushrooms to the pan and sauté until they turn golden brown, about 5 to 7 minutes.
  4. Stir in the minced garlic and optional chili flakes, cooking for an additional three minutes until fragrant.
  5. Mix in the cooked quinoa, thyme leaves, salt, and black pepper. Toss everything together until warm.

Notes

For variations, consider using regular mushrooms, different herbs, or adding roasted vegetables or greens.
