- 2 large sweet potatoes, peeled and sliced
- 2 cups heavy cream
- 4 cloves garlic, minced
- 1 cup grated cheese (Gruyere or cheddar)
- Salt and pepper to taste
- 1 tablespoon fresh thyme or rosemary (optional)
- 1 tablespoon olive oil or butter for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Combine heavy cream and minced garlic in a saucepan. Heat gently until just simmering.
- Grease a baking dish with olive oil or butter.
- Begin layering sweet potato slices in the baking dish, seasoning each layer lightly with salt and pepper.
- Drizzle some of the cream mixture over the sweet potatoes and sprinkle with cheese.
- Repeat the layering process until all ingredients are used, finishing with cheese on top.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until the sweet potatoes are tender and the top is golden.
- Allow to cool slightly before serving.
