  • 1 teaspoon sugar (brown sugar or coconut sugar can be used)
  • 1/4 cup sesame oil (toasted for added flavor)
  • 1 pinch salt (omit if using soy sauce)
  • 2 tablespoons chopped scallions (for color and sharpness)
  • 1 tablespoon sesame seeds (to add crunch and a nutty flavor)

Instructions

  1. Cook the noodles according to package instructions and drain them well.
  2. In a large skillet, heat the sesame oil over medium heat.
  3. Add the minced garlic and sauté for about 1 minute, or until fragrant and lightly golden.
  4. Pour in the chili oil, soy sauce, and rice vinegar—mix well.
  5. Stir in the sugar (if using) and a pinch of salt, and let the sauce simmer for about 30 seconds.
  6. Add the cooked noodles to the skillet, tossing them until they are coated in the sauce.
  7. Finish with chopped scallions and sesame seeds, tossing briefly to combine.
