- 1/4 cup sesame oil (toasted for added flavor)
- 1 pinch salt (omit if using soy sauce)
- 2 tablespoons chopped scallions (for color and sharpness)
- 1 tablespoon sesame seeds (to add crunch and a nutty flavor)
Instructions
- Cook the noodles according to package instructions and drain them well.
- In a large skillet, heat the sesame oil over medium heat.
- Add the minced garlic and sauté for about 1 minute, or until fragrant and lightly golden.
- Pour in the chili oil, soy sauce, and rice vinegar—mix well.
- Stir in the sugar (if using) and a pinch of salt, and let the sauce simmer for about 30 seconds.
- Add the cooked noodles to the skillet, tossing them until they are coated in the sauce.
- Finish with chopped scallions and sesame seeds, tossing briefly to combine.
