Description

Ingredients

  • 2 medium zucchinis, sliced into thick rounds or half-moons
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil

  • ¼ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice

Instructions

  1. Start by washing and slicing your zucchinis.
  2. In a small saucepan over low heat, melt the unsalted butter and add the minced garlic.
  3. Combine the zucchini slices with olive oil, salt, pepper, and garlic butter in a large bowl.
  4. If using wooden skewers, soak them in water for about 30 minutes.
  5. Thread the zucchini slices onto the skewers, securing them firmly.
  6. Preheat your grill to medium-high heat, around 400°F.
  7. Grill the skewers for 8-10 minutes, turning occasionally.
