Description

A creamy and comforting sweet potato bake enveloped in rich garlic butter and topped with melted cheese.


Ingredients

  • 3 pounds sweet potatoes
  • 1 cup heavy cream, warmed
  • 1/2 cup unsalted butter
  • 3 cloves fresh garlic, minced
  • 2 teaspoons fresh thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and chop the sweet potatoes into even-sized chunks.
  3. Boil the sweet potatoes in salted water until fork-tender, about 15-20 minutes.
  4. Drain and return the potatoes to the pot.
  5. Add warmed heavy cream, butter, minced garlic, thyme, salt, and pepper to the sweet potatoes, mashing until smooth.
  6. Transfer the mixture to a greased baking dish and spread evenly.
  7. Sprinkle the grated Parmesan cheese generously over the top.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

Notes

For a dairy-free version, swap butter with olive oil and omit cheese. Store leftovers in an airtight container in the refrigerator for up to three days.
