A creamy and comforting sweet potato bake enveloped in rich garlic butter and topped with melted cheese.

- 3 pounds sweet potatoes
- 1 cup heavy cream, warmed
- 1/2 cup unsalted butter
- 3 cloves fresh garlic, minced
- 2 teaspoons fresh thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and chop the sweet potatoes into even-sized chunks.
- Boil the sweet potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and return the potatoes to the pot.
- Add warmed heavy cream, butter, minced garlic, thyme, salt, and pepper to the sweet potatoes, mashing until smooth.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle the grated Parmesan cheese generously over the top.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
Notes
For a dairy-free version, swap butter with olive oil and omit cheese. Store leftovers in an airtight container in the refrigerator for up to three days.
