A delightful twist on the classic banana bread featuring the colorful crunch of Fruity Pebbles cereal.

- 1 ½ cups mashed ripe bananas (about 2 to 3 bananas)
- ⅓ cup vegetable oil
- 1 large egg
- 2 teaspoons vanilla extract
- ½ cup granulated sugar
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups all-purpose flour
- 1 cup Fruity Pebbles cereal
- 1 cup powdered sugar
- ½ teaspoon vanilla extract (for glaze)
- 1 ½ tablespoons milk
- 2 tablespoons Fruity Pebbles cereal, optional for topping
Instructions
- Preheat your oven to 350°F and grease an 8×4 loaf pan. Set it aside.
- Mash the bananas until mostly smooth in a large mixing bowl.
- Add the vegetable oil, egg, vanilla extract, and granulated sugar. Mix until well combined.
- Mix in the baking soda and salt to incorporate.
- Fold in the flour just until no dry streaks remain; be careful not to overmix.
- Incorporate the Fruity Pebbles cereal until evenly dispersed in the batter.
- Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Make the glaze by whisking together the powdered sugar, vanilla extract, and milk until smooth. Drizzle over the cooled loaf and sprinkle with additional Fruity Pebbles if desired. Allow to set for 10 minutes before slicing.

Store leftovers tightly wrapped at room temperature for up to three days or freeze slices for up to three months.
