- Rice paper wraps
- Lettuce leaves (butter or romaine)

- Cucumber, julienned

- Peanut butter
- Soy sauce
- Lime juice
- Honey or sugar
- Water
Instructions
- Start by prepping your vegetables. Slice them into thin strips so they’re easy to roll.
- Combine peanut butter, soy sauce, lime juice, and honey in a small bowl. Mix until smooth to make your creamy peanut sauce.
- Pour warm water into a shallow dish.
- Take one rice paper wrap and dip it into the water for about 10 seconds, just until it softens.
- Place the softened wrap onto a flat surface. Add a few pieces of lettuce, along with your choice of veggies and fresh herbs in the center.
- Fold in the sides of the wrap and roll it up tightly from the bottom.
- Repeat this process with the remaining wraps and filling ingredients.
- Serve your fresh spring rolls with the creamy peanut sauce for dipping.
