Ingredients

  • Rice paper wraps
  • Lettuce leaves (butter or romaine)
  • Carrots, julienned
  • Cucumber, julienned
  • Bell peppers, sliced thinly
  • Fresh herbs (mint, cilantro, basil)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Honey or sugar
  • Water

Instructions

  1. Start by prepping your vegetables. Slice them into thin strips so they’re easy to roll.
  2. Combine peanut butter, soy sauce, lime juice, and honey in a small bowl. Mix until smooth to make your creamy peanut sauce.
  3. Pour warm water into a shallow dish.
  4. Take one rice paper wrap and dip it into the water for about 10 seconds, just until it softens.
  5. Place the softened wrap onto a flat surface. Add a few pieces of lettuce, along with your choice of veggies and fresh herbs in the center.
  6. Fold in the sides of the wrap and roll it up tightly from the bottom.
  7. Repeat this process with the remaining wraps and filling ingredients.
  8. Serve your fresh spring rolls with the creamy peanut sauce for dipping.

Notes
