- 1 cup long-grain or basmati rice
- 2 cups beef or vegetable broth
- 1 onion, thinly sliced
- 2 tablespoons unsalted butter
- 1 cup cream or sour cream
- Salt and pepper, to taste
- Grated cheese (optional, Parmesan or Gruyère)
Instructions
- In a large skillet, melt the butter over medium heat.
- Add sliced onions, and let them cook until they are caramelized and golden brown, about 15-20 minutes.
- Stir in the rice, cooking for an additional 2 minutes to toast it slightly.
- Pour in the broth, bring everything to a boil, then reduce the heat to low. Cover and simmer until the rice is tender and the liquid is absorbed, around 15-20 minutes.
- Once the rice is fully cooked, stir in your chosen cream or sour cream and season with salt and pepper.
- Serve warm, sprinkling grated cheese on top if desired.
Notes
Garnish with fresh herbs for added color and flavor. Can be stored in the fridge for 3-4 days or frozen for about a month.
