Instructions
- Whisk together the mashed sweet potatoes, milk, egg, melted butter, and vanilla extract in a medium bowl until well combined.
- Mix the all-purpose flour, sugar, baking powder, and salt in a separate large bowl.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
- Preheat a skillet over medium heat and lightly grease it with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.

Notes
