- 1 cup lime juice
- 1 cup sugar
- 1/4 cup water
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 1 teaspoon grated lime zest
- 1 teaspoon vanilla extract
- 1 envelope unflavored gelatin
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 pre-made graham cracker crust
Instructions
- In a medium saucepan, combine lime juice, sugar, water, cornstarch, and salt. Cook over medium heat, stirring constantly until the mixture thickens. Once thickened, remove from heat.
- In a separate bowl, whisk the egg yolks. Gradually add some of the hot lime mixture to the egg yolks, stirring swiftly to temper the eggs. Pour this egg mixture back into the saucepan, continually stirring.
- Stir in the lime zest and vanilla extract. Sprinkle the unflavored gelatin over the mixture, stirring until fully dissolved. Set aside to cool to room temperature.
- In a large bowl, beat the heavy cream and powdered sugar together until stiff peaks form. Carefully fold the whipped cream into the cooled lime mixture until just combined.
- Pour the light and fluffy filling into the prepared graham cracker crust. Refrigerate for a minimum of 240 minutes, or until the pie is fully set.
- Serve chilled, and top with additional whipped cream if desired.
Notes
For a thicker filling, ensure your mixture is adequately thickened on the stovetop before cooling.
