Description

A delightful crustless quiche featuring the freshness of zucchini and aromatic basil, perfect for brunch or a light dinner.


Ingredients

  • 4 medium zucchinis, grated
  • 1 cup fresh basil, chopped
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 4 large eggs
  • 1/2 cup milk (dairy or plant-based)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 onion, finely chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and grease your quiche pan with olive oil.
  2. Sauté the onion in a skillet with olive oil over medium heat for about 5 minutes or until soft and translucent.
  3. Mix the grated zucchini, sautéed onion, chopped basil, shredded cheese, eggs, milk, salt, pepper, and garlic powder in a large bowl until well combined.
  4. Pour the mixture into the prepared quiche pan, spreading it evenly.
  5. Bake for 30-35 minutes until set and golden brown on top.
  6. Cool slightly before slicing and serve warm or at room temperature.
