- 4 medium zucchinis, grated
- 1 cup fresh basil, chopped
- 1 cup shredded cheese (mozzarella or cheddar)
- 4 large eggs
- 1/2 cup milk (dairy or plant-based)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 onion, finely chopped
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C) and grease your quiche pan with olive oil.
- Sauté the onion in a skillet with olive oil over medium heat for about 5 minutes or until soft and translucent.
- Mix the grated zucchini, sautéed onion, chopped basil, shredded cheese, eggs, milk, salt, pepper, and garlic powder in a large bowl until well combined.
- Pour the mixture into the prepared quiche pan, spreading it evenly.
- Bake for 30-35 minutes until set and golden brown on top.
- Cool slightly before slicing and serve warm or at room temperature.
