- 2 salmon fillets
- 1 sheet of puff pastry (store-bought)
- 1 cup fresh spinach
- 4 oz cream cheese
- 1 garlic clove, minced
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C).
- Drizzle some olive oil in a skillet and heat it over medium.
- Add the minced garlic and sauté until fragrant.
- Toss in the fresh spinach and cook until it wilts, stirring occasionally.
- Off the heat, mix in the cream cheese, seasoning it with salt and pepper to taste.
- On a floured surface, roll out the puff pastry to your desired thickness.
- Lay a salmon fillet on one half of the puff pastry. Spoon the creamy spinach mixture generously on top.
- Carefully fold the other half of the pastry over the salmon and seal the edges well.
- Brush the top of the pastry with the beaten egg.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crisp.
