Description

Delightful zucchini bagels that offer a healthy, gluten-free alternative to traditional bagels, perfect for breakfast or brunch.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Grate the zucchinis and squeeze out the excess moisture using a clean cloth or paper towel.
  3. Combine the drained zucchini, almond flour, Parmesan cheese, eggs, baking powder, garlic powder, onion powder, salt, and pepper in a large mixing bowl and mix well.
  4. Scoop portions of the mixture onto the baking sheet, shaping them into bagel forms with a hole in the middle.
  5. Bake for 20-25 minutes or until they are beautifully golden brown and cooked through.
  6. Let them cool slightly before serving, allowing their flavors to meld.

Notes

Feel free to experiment with different flours or toppings. Ensure to squeeze out as much moisture from zucchinis as possible.
