- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onions and minced garlic. Sauté until softened and fragrant, about 2-3 minutes.
- Stir in the ground beef, breaking it up with a spatula, and cook until browned, roughly 5-7 minutes.
- Toss in the diced potatoes, then pour in the beef broth. Add paprika, salt, and pepper to taste.
- Bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 20-25 minutes until the potatoes are fork-tender.
- Garnish with fresh parsley before serving to add a pop of color and freshness.
