Description

A comforting one-pan meal of ground beef and potatoes that’s budget-friendly and kid-approved.

Ingredients

Scale
  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onions and minced garlic. Sauté until softened and fragrant, about 2-3 minutes.
  3. Stir in the ground beef, breaking it up with a spatula, and cook until browned, roughly 5-7 minutes.
  4. Toss in the diced potatoes, then pour in the beef broth. Add paprika, salt, and pepper to taste.
  5. Bring the mixture to a boil. Once boiling, reduce the heat, cover, and let it simmer for 20-25 minutes until the potatoes are fork-tender.
  6. Garnish with fresh parsley before serving to add a pop of color and freshness.

Notes

For variations, consider swapping ground beef for turkey or adding extra veggies.
