Description

Delicious blondies that combine the flakiness of croissants with the sweetness of blondies, with a delightful almond twist.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup croissant crumbs (about 23 croissants)
  • ½ cup sliced almonds
  • ¼ cup almond flour (optional)
  • ½ cup powdered sugar (for optional glaze)
  • 2 tbsp almond milk (or regular milk)
  • ½ tsp almond extract (for optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch square baking pan with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Mix the melted butter and brown sugar until smooth. Add the eggs one at a time, stirring in the vanilla extract.
  4. Combine the dry ingredients into the wet mixture and fold gently until just combined.
  5. Fold in the croissant crumbs, sliced almonds, and almond flour (if using).
  6. Pour the batter into your prepared pan, spreading it evenly.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Once baked, let cool in the pan for 10 minutes, then transfer to a wire rack.
  9. For the optional glaze, mix powdered sugar, almond milk, and almond extract, and drizzle over cooled blondies.
