Delicious blondies that combine the flakiness of croissants with the sweetness of blondies, with a delightful almond twist.

- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, melted
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup croissant crumbs (about 2–3 croissants)
- ½ cup sliced almonds
- ¼ cup almond flour (optional)
- ½ cup powdered sugar (for optional glaze)
- 2 tbsp almond milk (or regular milk)
- ½ tsp almond extract (for optional glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch square baking pan with parchment paper.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- Mix the melted butter and brown sugar until smooth. Add the eggs one at a time, stirring in the vanilla extract.
- Combine the dry ingredients into the wet mixture and fold gently until just combined.
- Fold in the croissant crumbs, sliced almonds, and almond flour (if using).
- Pour the batter into your prepared pan, spreading it evenly.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Once baked, let cool in the pan for 10 minutes, then transfer to a wire rack.
- For the optional glaze, mix powdered sugar, almond milk, and almond extract, and drizzle over cooled blondies.
Notes
Store leftovers in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
