Description

Delightful shrimp rolls filled with creamy mayonnaise and zesty lemon, perfect for a summer meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill or parsley, chopped
  • 4 hot dog rolls or lobster rolls
  • Butter, for toasting

Instructions

  1. Boil the shrimp: In a pot, bring salted water to a boil and add the shrimp. Cook for about 2-3 minutes until they turn pink and are cooked through. Drain and let them cool.
  2. Mix the filling: In a mixing bowl, combine the cooled shrimp, mayonnaise, lemon juice, salt, pepper, and your choice of fresh herbs. Mix gently until the shrimp are well coated.
  3. Prepare the rolls: Split the rolls open and spread softened butter on the outside of each one.
  4. Toast the rolls: Place the rolls butter-side down on a skillet over medium heat. Toast them until golden brown and crispy.
  5. Assemble and serve: Fill each toasted roll generously with the shrimp mixture and enjoy your delightful feast!

Notes

For a lighter option, consider using Greek yogurt instead of mayonnaise. Leftover shrimp filling can be stored for up to 2 days.
