Description
A vibrant dish of juicy grilled chicken layered over creamy avocado rice, bursting with sweet and tangy flavors.
Ingredients
Scale
- 1 lb chicken breasts (boneless, skinless)
- 1/4 cup honey
- 2 limes (juiced)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper (to taste)
- 1 cup rice (uncooked)
- 1 avocado (diced)
- 1/2 cup cilantro (chopped)
- 1/4 cup sour cream
Instructions
- Whisk together honey, lime juice, chili powder, cumin, salt, and pepper in a bowl.
- Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
- Prepare the rice according to package directions and set aside to cool.
- Heat your grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side.
- Combine the cooked rice, diced avocado, chopped cilantro, and sour cream in a large bowl.
- Serve by spooning avocado rice on plates and topping with sliced honey lime chicken.
Notes
For a healthier option, substitute brown rice. Letting chicken marinate longer enhances flavors. Rinse rice before cooking for fluffiness.
