Description

A vibrant dish of juicy grilled chicken layered over creamy avocado rice, bursting with sweet and tangy flavors.

Ingredients

Scale
  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. Whisk together honey, lime juice, chili powder, cumin, salt, and pepper in a bowl.
  2. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
  3. Prepare the rice according to package directions and set aside to cool.
  4. Heat your grill or skillet over medium heat and cook the marinated chicken for about 6-7 minutes on each side.
  5. Combine the cooked rice, diced avocado, chopped cilantro, and sour cream in a large bowl.
  6. Serve by spooning avocado rice on plates and topping with sliced honey lime chicken.

Notes

For a healthier option, substitute brown rice. Letting chicken marinate longer enhances flavors. Rinse rice before cooking for fluffiness.
