Ingredients

  • 2 tablespoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ cup cold butter (cubed)
  • ¾ cup milk
  • 1 cup blueberries
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, sugar, and salt in a large mixing bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined; do not overmix.
  5. Fold in the blueberries gently to avoid breaking them.
  6. Turn the dough out onto a floured surface and knead it gently a few times. Pat it into a 1-inch thick rectangle.
  7. Cut out biscuits using a round cutter and place them on the prepared baking sheet.
  8. Bake for about 15–20 minutes or until golden brown.
  9. Prepare the glaze by whisking together the powdered sugar, lemon juice, and lemon zest until smooth.
  10. Drizzle the lemon glaze over the biscuits once they have cooled slightly.

Notes

Make sure to use cold butter for flaky biscuits. Optional: Serve with crème fraîche or vanilla ice cream.
