- ½ cup cold butter (cubed)
- ¾ cup milk
- 1 cup blueberries
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, sugar, and salt in a large mixing bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined; do not overmix.
- Fold in the blueberries gently to avoid breaking them.
- Turn the dough out onto a floured surface and knead it gently a few times. Pat it into a 1-inch thick rectangle.
- Cut out biscuits using a round cutter and place them on the prepared baking sheet.
- Bake for about 15–20 minutes or until golden brown.
- Prepare the glaze by whisking together the powdered sugar, lemon juice, and lemon zest until smooth.
- Drizzle the lemon glaze over the biscuits once they have cooled slightly.
Notes
Make sure to use cold butter for flaky biscuits. Optional: Serve with crème fraîche or vanilla ice cream.
