Ingredients

  • 1 3/4 cup powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate, melted
  • 1/2 cup raspberry puree
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Mix the almond flour, powdered sugar, and cocoa powder in a bowl.
  3. Whip the egg whites in a separate bowl until foamy. Gradually add granulated sugar and whip until stiff peaks form, about 5-7 minutes.
  4. Fold the dry mixture into the whipped egg whites gently.
  5. Transfer the macaron batter into a piping bag. Pipe small circles onto your prepared baking sheet.
  6. Allow the piped macarons to rest for 30-60 minutes until they form a skin.
  7. Bake for 15-18 minutes. Let them cool completely on the baking sheet.
  8. Prepare the filling by mixing the melted dark chocolate with raspberry puree and heavy cream until smooth.
  9. Sandwich the macarons together with the raspberry chocolate filling and enjoy!
