- 4 chicken thighs
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup olive oil
- 8 cloves garlic, minced
- 1 tablespoon oregano
- 1 tablespoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Whisk together the orange juice, lime juice, olive oil, minced garlic, oregano, cumin, salt, and pepper to create the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 120 minutes, or preferably overnight.
- Preheat your oven to 375°F (190°C).
- Remove the chicken from the marinade, letting excess marinade drip off, and place it in a baking dish.
- Bake the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (75°C), occasionally basting with the reserved marinade.
- Garnish with fresh cilantro before serving.
Notes
For more flavor, marinate overnight. Consider adding red pepper flakes for a spicy twist.
