Description

A vibrant dish featuring juicy chicken thighs marinated in a citrus blend and aromatic spices, perfect for weeknight dinners.


Ingredients

  • 4 chicken thighs
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 8 cloves garlic, minced
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Whisk together the orange juice, lime juice, olive oil, minced garlic, oregano, cumin, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 120 minutes, or preferably overnight.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the chicken from the marinade, letting excess marinade drip off, and place it in a baking dish.
  5. Bake the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (75°C), occasionally basting with the reserved marinade.
  6. Garnish with fresh cilantro before serving.

Notes

For more flavor, marinate overnight. Consider adding red pepper flakes for a spicy twist.
