- 1 cup cottage cheese
- 1 cup chopped vegetables (spinach, bell peppers, onions, etc.)
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Beat the eggs in a mixing bowl until frothy.
- Add the cottage cheese and mix until well combined.
- Stir in the chopped vegetables, optional cheese, and season with salt and pepper.
- Grease a baking dish lightly with cooking spray or oil.
- Pour the mixture into the prepared baking dish.
- Bake for 30-35 minutes, until the quiche is set and lightly golden.
- Remove from the oven and cool slightly before slicing and serving.
