Delightful bite-sized potato skins filled with cheese and bacon, perfect for any gathering.
Ingredients
- Small potatoes (about 12 to 15)
- Olive oil
- Salt
- Pepper
- Cheddar cheese (shredded)
- Bacon bits
- Sour cream
- Green onions (chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the small potatoes. Use a fork to poke holes in each potato to let steam escape while baking.
- Rub the potatoes with olive oil, then season generously with salt and pepper.
- Arrange the potatoes on a baking sheet and bake for 20-25 minutes or until they’re tender.
- Remove from the oven and let them cool for a few minutes.
- Cut each potato in half and scoop out a little of the insides, leaving a small border.
- Fill each potato skin with a generous amount of cheddar cheese and sprinkle with bacon bits.
- Return to the oven for an additional 10 minutes or until the cheese is beautifully melted and bubbly.
- Serve while hot, topped with sour cream and garnished with chopped green onions.
Notes
Make sure not to over-scoop the insides of the potatoes for optimal texture. Experiment with different toppings!
