Description

Delightful bite-sized potato skins filled with cheese and bacon, perfect for any gathering.


Ingredients

  • Small potatoes (about 12 to 15)
  • Olive oil
  • Salt
  • Pepper
  • Cheddar cheese (shredded)
  • Bacon bits
  • Sour cream
  • Green onions (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the small potatoes. Use a fork to poke holes in each potato to let steam escape while baking.
  3. Rub the potatoes with olive oil, then season generously with salt and pepper.
  4. Arrange the potatoes on a baking sheet and bake for 20-25 minutes or until they’re tender.
  5. Remove from the oven and let them cool for a few minutes.
  6. Cut each potato in half and scoop out a little of the insides, leaving a small border.
  7. Fill each potato skin with a generous amount of cheddar cheese and sprinkle with bacon bits.
  8. Return to the oven for an additional 10 minutes or until the cheese is beautifully melted and bubbly.
  9. Serve while hot, topped with sour cream and garnished with chopped green onions.

Notes

Make sure not to over-scoop the insides of the potatoes for optimal texture. Experiment with different toppings!
