Description

Delicious cookies combining crunchy cornflakes with rich toffee and buttery sweetness, perfect for any occasion.


Ingredients

  • 1 cup Light Brown Sugar
  • 1 teaspoon Salt
  • 1 tablespoon Vanilla Extract
  • 1 tablespoon Bourbon (optional)
  • 3 cups Cornflake Cereal
  • ½ cup Milk Powder
  • ⅓ cup White Sugar
  • 1 pinch Salt
  • ¼ cup Butter
  • ¾ cup Unsalted Butter
  • 1 cup Dark Brown Sugar
  • ½ cup Granulated Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1 cup Bread Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Sea Salt
  • 1 cup Chopped Toffee Pieces
  • 1 tablespoon Edible Gold Glitter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Cream together the 1 cup of butter, ¾ cup unsalted butter, and sugars until light and fluffy.
  3. Add the eggs one at a time, stirring in the vanilla and bourbon until well combined.
  4. Mix the flours, baking soda, baking powder, and salt in a separate bowl.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Fold in the cornflakes, chopped toffee pieces, and a pinch of salt if desired.
  7. Scoop the dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden and the centers set but still soft.
  9. Cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
  10. Decorate with edible gold glitter if desired.
