½ tsp black pepper

½ tsp salt (adjust to taste)

1 package (16 oz/450g) potato gnocchi

2 cups fresh spinach, chopped

1 cup half-and-half (or whole milk for lighter version)

¼ cup all-purpose flour (for thickening)

3 tbsp unsalted butter

½ cup grated Parmesan cheese

Optional: Red pepper flakes for a spicy kick


Instructions

  • Prepare the Chicken and Vegetables: Dice the onions, carrots, and celery. Place them in the bottom of your slow cooker along with whole chicken breasts and minced garlic.
  • Slow Cook the Base: Pour in the chicken broth, season with Italian herbs, salt, and pepper, then cover and cook on low for 6-7 hours or high for 4 hours.
  • Add Gnocchi and Cream: Remove the cooked chicken, shred it, and return it to the pot. Stir in the gnocchi and cook for an additional 30 minutes. Mix in heavy cream and fresh spinach just before serving.
  • Finish and Serve: Taste for seasoning adjustments. Ladle into bowls and garnish with parmesan or parsley.

Notes

  • You can substitute rotisserie chicken to shorten cooking time add it during the gnocchi step.
  • For a dairy-free version, use coconut milk or almond milk, and omit cheese.
  • Add mushrooms or corn for extra heartiness.
  • Gnocchi tends to absorb liquid; if reheating leftovers, consider adding a splash of broth or milk to loosen the consistency.
