Description

Delightfully crunchy vegetable fritters that are perfect for snacking or as a side dish, made with a combination of seasonal vegetables and chickpea flour.


Ingredients

  • 2 cups mixed vegetables (zucchini, carrots, bell peppers)
  • 1 cup chickpea flour (besan)
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 cup water
  • Oil for frying

Instructions

  1. Prep the vegetables: Grate or finely chop your mixed vegetables and place them in a large mixing bowl.
  2. Mix dry ingredients: In another bowl, combine chickpea flour, baking powder, salt, black pepper, cumin, and coriander.
  3. Create the batter: Gradually add water to the dry mixture, stirring until you achieve a thick batter.
  4. Fold in the vegetables: Carefully fold the mixed vegetables into the batter until everything is well combined.
  5. Heat the oil: In a frying pan over medium heat, add enough oil to cover the bottom.
  6. Fry the fritters: Drop spoonfuls of the batter into the hot oil, cooking until they turn golden brown on both sides, roughly 3-4 minutes per side.
  7. Drain excess oil: Remove the fritters from the pan and place them on paper towels to soak up any excess oil.
  8. Serve hot: Enjoy your fritters while they’re fresh and hot, paired with your favorite dipping sauce.
