- 2 cups mixed vegetables (zucchini, carrots, bell peppers)
- 1 cup chickpea flour (besan)
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 cup water
- Oil for frying
Instructions
- Prep the vegetables: Grate or finely chop your mixed vegetables and place them in a large mixing bowl.
- Mix dry ingredients: In another bowl, combine chickpea flour, baking powder, salt, black pepper, cumin, and coriander.
- Create the batter: Gradually add water to the dry mixture, stirring until you achieve a thick batter.
- Fold in the vegetables: Carefully fold the mixed vegetables into the batter until everything is well combined.
- Heat the oil: In a frying pan over medium heat, add enough oil to cover the bottom.
- Fry the fritters: Drop spoonfuls of the batter into the hot oil, cooking until they turn golden brown on both sides, roughly 3-4 minutes per side.
- Drain excess oil: Remove the fritters from the pan and place them on paper towels to soak up any excess oil.
- Serve hot: Enjoy your fritters while they’re fresh and hot, paired with your favorite dipping sauce.
Notes
For best results, don’t overmix the batter and ensure your oil is at the right temperature for frying.
