- 1 rotisserie chicken, shredded
- 8 tostada shells
- 1 cup refried beans
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Hot sauce (optional)
- Lime wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the tostada shells on a baking sheet and crisp them in the oven for about 5 minutes.
- Spread a generous layer of refried beans over each tostada shell.
- Pile on the shredded rotisserie chicken.
- Add a colorful mix of shredded lettuce, diced tomatoes, and cheese on top.
- Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven. Finish off with sour cream, chopped cilantro, and a drizzle of hot sauce if desired.
- Serve warm with lime wedges on the side.
Notes
For extra flavor, season refried beans with cumin or chili powder. Feel free to experiment with toppings or swap chicken for grilled shrimp or vegetables.
