Instructions

  1. Heat the olive oil in a non-stick skillet over medium-high heat until it’s shimmering.
  2. Sprinkle the crumbled feta evenly across the skillet, ensuring it covers the bottom.
  3. Allow the feta to cook for about 1-2 minutes until it begins to melt slightly and the edges turn crisp.
  4. Carefully crack the eggs over the feta, spacing them apart to avoid overlap.
  5. Season the eggs with salt and black pepper to your liking.
  6. Cook for about 3-4 minutes, or until the whites are set and the yolks remain runny.
  7. Optional: Sprinkle chopped parsley and red pepper flakes over the eggs.
  8. Once cooked, gently slide the eggs and crispy feta onto a plate.
