- 2 cups all-purpose flour
- 3/4 cup boiling water
- 1/2 teaspoon salt
- 1/4 cup vegetable oil
- 4–5 green onions, finely chopped
- Additional salt for sprinkling
Instructions
- Mix the dough: In a mixing bowl, combine the all-purpose flour and salt. Gradually pour in the boiling water, stirring until a shaggy dough forms. Once cool enough to handle, knead the dough until it’s smooth and elastic. Cover and let it rest for 30 minutes.
- Shape the pancakes: Divide the rested dough into equal portions. Roll each portion into thin circles. Brush a light layer of vegetable oil on each circle, sprinkle with chopped green onions, and add a pinch of salt. Roll up the circles tightly and then coil them into a spiral. Flatten each spiral gently into a pancake shape.
- Fry to perfection: Heat a skillet over medium heat and add a bit of oil. Fry each pancake for about 3-4 minutes per side or until they are golden and crispy.
- Serve warm: Enjoy immediately, paired with soy sauce or your favorite dipping sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Freeze with parchment paper between layers to prevent sticking.
