Description

Indulge in Creamy Tuscan Shrimp Linguine with shrimp, cherry tomatoes, and spinach in a rich creamy sauce for a cozy dinner.

Ingredients

Scale
  • 8 oz linguine pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the linguine according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant.
  3. Toss in the shrimp and cook until they turn pink, about 2-3 minutes per side.
  4. Add the halved cherry tomatoes and cook for an additional 2 minutes.
  5. Incorporate the spinach and cook until it wilts.
  6. Pour in the heavy cream and sprinkle the grated Parmesan cheese. Stir to combine, then season with salt and pepper.
  7. Gently fold the cooked linguine into the skillet, tossing to coat in the creamy sauce.
  8. Serve immediately, garnished with fresh basil.

Notes

For a healthier twist, use whole wheat linguine or substitute shrimp with chicken or mushrooms. Store leftovers in an airtight container for up to 3 days.
