Description

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Prepare the chicken breasts by seasoning with salt and pepper, then place them in the skillet.
  3. Cook the chicken for about 5-7 minutes on each side, until golden brown and cooked through.
  4. Set the chicken aside in a warm place.
  5. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  6. Add the diced tomatoes and let simmer for 3-4 minutes.
  7. Pour the heavy cream into the skillet and mix well, letting it simmer for another 2-3 minutes.
  8. Incorporate the chopped basil into the sauce.
  9. Reintroduce the cooked chicken back to the skillet, ensuring it’s coated with the sauce.
  10. Serve the dish immediately, garnished with extra basil if desired.

Notes

Feel free to substitute heavy cream with a lighter alternative. Fresh basil is preferred, but dried can be used in moderation.
