- 1 cup heavy cream
- 1 cup diced tomatoes
- 1 cup fresh basil, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Prepare the chicken breasts by seasoning with salt and pepper, then place them in the skillet.
- Cook the chicken for about 5-7 minutes on each side, until golden brown and cooked through.
- Set the chicken aside in a warm place.
- Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
- Add the diced tomatoes and let simmer for 3-4 minutes.
- Pour the heavy cream into the skillet and mix well, letting it simmer for another 2-3 minutes.
- Incorporate the chopped basil into the sauce.
- Reintroduce the cooked chicken back to the skillet, ensuring it’s coated with the sauce.
- Serve the dish immediately, garnished with extra basil if desired.
Notes
Feel free to substitute heavy cream with a lighter alternative. Fresh basil is preferred, but dried can be used in moderation.
