- 2 ripe avocados
- 4 slices of whole-grain bread
- 1 tablespoon fresh lime juice
- 1 teaspoon red pepper flakes
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh cilantro
- Optional: Cherry tomatoes, halved
- Optional: Poached or fried eggs for serving
Instructions
- Start by toasting the whole-grain bread slices until they are golden and crispy. Set them aside on a plate.
- Cut the avocados in half and remove the pits. Scoop the flesh into a mixing bowl.
- Add the fresh lime juice, red pepper flakes, garlic powder, and a generous pinch of salt and black pepper to the avocado.
- Using a fork, mash the mixture until it’s creamy, but leave some chunks for added texture.
- Generously spread the avocado mixture over each slice of toasted bread.
- Evenly sprinkle crumbled feta cheese over the avocado.
- For a pop of color and flavor, add the chopped fresh cilantro on top.
