Description

Ingredients

  • 2 ripe avocados
  • 4 slices of whole-grain bread
  • 1 tablespoon fresh lime juice
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh cilantro
  • Optional: Cherry tomatoes, halved
  • Optional: Poached or fried eggs for serving

Instructions

  1. Start by toasting the whole-grain bread slices until they are golden and crispy. Set them aside on a plate.
  2. Cut the avocados in half and remove the pits. Scoop the flesh into a mixing bowl.
  3. Add the fresh lime juice, red pepper flakes, garlic powder, and a generous pinch of salt and black pepper to the avocado.
  4. Using a fork, mash the mixture until it’s creamy, but leave some chunks for added texture.
  5. Generously spread the avocado mixture over each slice of toasted bread.
  6. Evenly sprinkle crumbled feta cheese over the avocado.
  7. For a pop of color and flavor, add the chopped fresh cilantro on top.
