Ingredients

  • 8 ounces pasta (spaghetti, penne, or your favorite shape)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the tomatoes, drizzle with olive oil, and season with salt and pepper. Spread them on a baking sheet.
  3. Roast the tomatoes for 25-30 minutes until caramelized.
  4. Cook the pasta according to package instructions until al dente.
  5. Sauté minced garlic in a large pan with olive oil over medium heat until fragrant.
  6. Add the roasted tomatoes and gently mash them to release their juices.
  7. Stir in the heavy cream and let simmer until slightly thickened.
  8. Toss the cooked pasta into the sauce, mixing well.
