  • 1 tablespoon olive oil
  • 8 oz fresh cremini or button mushrooms, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Start by patting the chicken thighs dry with paper towels—this step is crucial for achieving that crispy skin. Season both sides generously with salt and pepper.
  2. Heat the butter and olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is crispy and golden brown.
  3. Carefully flip the chicken and cook for an additional 2-3 minutes on the other side before removing it from the skillet and setting it aside.
  4. In the same skillet, toss in the diced mushrooms and minced garlic. Sauté for 4-5 minutes until the mushrooms release their moisture and begin to brown, while the garlic becomes fragrant.
  5. Pour in the chicken broth, using a wooden spoon to scrape up any flavorful bits stuck to the bottom of the pan. Let the broth reduce slightly.
  6. Stir in the heavy cream and allow the sauce to simmer gently until it thickens and becomes velvety.
  7. Nestle the chicken thighs back into the creamy mushroom sauce, reducing the heat to low, and cover the skillet. Cook for 10-12 minutes until the chicken is cooked through and tender, and the flavors meld beautifully.
  8. Finish with chopped fresh parsley or thyme for a pop of color and freshness before serving directly from the skillet.

Notes

Consider using shiitake or portobello mushrooms for a different flavor profile. Coconut cream can be a dairy-free alternative.
