- 8 oz fresh cremini or button mushrooms, diced
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 2 tablespoons fresh parsley or thyme, chopped (plus extra for garnish)
- Additional salt and pepper, to taste

- Start by patting the chicken thighs dry with paper towels—this step is crucial for achieving that crispy skin. Season both sides generously with salt and pepper.
- Heat the butter and olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is crispy and golden brown.
- Carefully flip the chicken and cook for an additional 2-3 minutes on the other side before removing it from the skillet and setting it aside.
- In the same skillet, toss in the diced mushrooms and minced garlic. Sauté for 4-5 minutes until the mushrooms release their moisture and begin to brown, while the garlic becomes fragrant.
- Pour in the chicken broth, using a wooden spoon to scrape up any flavorful bits stuck to the bottom of the pan. Let the broth reduce slightly.
- Stir in the heavy cream and allow the sauce to simmer gently until it thickens and becomes velvety.
- Nestle the chicken thighs back into the creamy mushroom sauce, reducing the heat to low, and cover the skillet. Cook for 10-12 minutes until the chicken is cooked through and tender, and the flavors meld beautifully.
- Finish with chopped fresh parsley or thyme for a pop of color and freshness before serving directly from the skillet.
Notes
Consider using shiitake or portobello mushrooms for a different flavor profile. Coconut cream can be a dairy-free alternative.
