- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh blackberries
- Maple syrup (optional, for serving)
Instructions
- Whisk together the flour, eggs, milk, melted butter, and salt until smooth. Let it rest for 30 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter into the skillet.
- Cook until edges start to brown, about 1-2 minutes. Flip and cook for another minute, then transfer to a plate.
- Combine cream cheese, powdered sugar, lemon juice, and lemon zest in another bowl until smooth.
- Spread the cream cheese mixture on each crepe, top with blackberries.
- Roll or fold the crepes and serve drizzled with maple syrup if desired.
Notes
For thinner crepes, ensure your batter is well-mixed and has time to rest. The crepes can be refrigerated for up to 2 days.
