Description

Ingredients

  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh blackberries
  • Maple syrup (optional, for serving)

Instructions

  1. Whisk together the flour, eggs, milk, melted butter, and salt until smooth. Let it rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter into the skillet.
  3. Cook until edges start to brown, about 1-2 minutes. Flip and cook for another minute, then transfer to a plate.
  4. Combine cream cheese, powdered sugar, lemon juice, and lemon zest in another bowl until smooth.
  5. Spread the cream cheese mixture on each crepe, top with blackberries.
  6. Roll or fold the crepes and serve drizzled with maple syrup if desired.

Notes

For thinner crepes, ensure your batter is well-mixed and has time to rest. The crepes can be refrigerated for up to 2 days.
