Description

Deliciously crispy taquitos filled with a creamy mixture of chicken and cheese, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 cups shredded cooked chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 810 small flour or corn tortillas
  • Cooking spray or oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the shredded chicken, cream cheese, shredded cheese, garlic powder, onion powder, chili powder, cumin, salt, and pepper in a mixing bowl until well mixed.
  3. Warm the tortillas gently in the microwave or on a skillet to make them pliable.
  4. Spoon about 2 tablespoons of the chicken filling onto each tortilla.
  5. Roll them tightly and place them seam-side down on a baking sheet.
  6. Spray the taquitos with cooking spray or brush with oil for a golden finish.
  7. Bake for 20-25 minutes, or until they are golden and crispy.
  8. Serve hot with your choice of salsa, guacamole, or sour cream.

Notes

For added spice, consider mixing diced jalapeños into the filling. Leftover taquitos can be stored in an airtight container for up to 3 days or frozen for longer storage.
