Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Whisk together the flour and salt in another bowl. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the chopped cranberries and pistachios until evenly distributed. If using cornstarch for extra crispness, add it at this stage.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on a wire rack before serving.
