- 2 cups bowtie pasta
- 1 pound chicken breast, cubed
- 2 cups broccoli florets
- 1/2 cup unsalted butter
- 2 cloves garlic, minced
- 1 unit lemon, juiced and zested
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: Fresh parsley, chopped for garnish
Instructions
- Boil water in a large pot, season with salt, and cook the bowtie pasta according to package directions. Drain and set aside.
- Heat a splash of olive oil in a large skillet over medium heat. Add the cubed chicken, seasoning with salt, pepper, and paprika. Cook for about 5-7 minutes until golden brown. Remove from the skillet and set aside.
- Add more oil if needed and stir in the broccoli florets. Cook for about 3-4 minutes until tender-crisp.
- Reduce the heat and add melted butter and minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
- Add the chicken back to the skillet along with the cooked pasta, lemon juice, and zest. Toss everything together.
- Adjust seasoning with salt and pepper as desired. Garnish with chopped parsley before serving.
Notes
Feel free to substitute chicken with shrimp or grilled tofu for a vegetarian option. You can also experiment with different vegetables.
