Description

Ingredients

  • 2 cups bowtie pasta
  • 1 pound chicken breast, cubed
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 unit lemon, juiced and zested
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Boil water in a large pot, season with salt, and cook the bowtie pasta according to package directions. Drain and set aside.
  2. Heat a splash of olive oil in a large skillet over medium heat. Add the cubed chicken, seasoning with salt, pepper, and paprika. Cook for about 5-7 minutes until golden brown. Remove from the skillet and set aside.
  3. Add more oil if needed and stir in the broccoli florets. Cook for about 3-4 minutes until tender-crisp.
  4. Reduce the heat and add melted butter and minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
  5. Add the chicken back to the skillet along with the cooked pasta, lemon juice, and zest. Toss everything together.
  6. Adjust seasoning with salt and pepper as desired. Garnish with chopped parsley before serving.

Notes

Feel free to substitute chicken with shrimp or grilled tofu for a vegetarian option. You can also experiment with different vegetables.
