Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onion and minced garlic, cooking until fragrant, about 3-5 minutes.
- Cook the sliced mushrooms for roughly 10 minutes until they release moisture and brown slightly.
- Pour in the vegetable broth and sprinkle in the thyme. Bring to a boil, then reduce heat and let simmer for 15 minutes.
- Using an immersion blender, blend the soup to your desired consistency.
- Stir in the cottage cheese until smooth and well blended.
- Adjust salt and pepper to taste, then garnish with fresh parsley before serving.
