Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups mixed mushrooms, sliced (such as cremini, shiitake, or button)
  • 4 cups vegetable broth
  • 1 cup cottage cheese
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, cooking until fragrant, about 3-5 minutes.
  3. Cook the sliced mushrooms for roughly 10 minutes until they release moisture and brown slightly.
  4. Pour in the vegetable broth and sprinkle in the thyme. Bring to a boil, then reduce heat and let simmer for 15 minutes.
  5. Using an immersion blender, blend the soup to your desired consistency.
  6. Stir in the cottage cheese until smooth and well blended.
