Description
A creamy twist on classic mashed potatoes with the addition of cottage cheese for extra protein and flavor.
Ingredients
Scale
- 2 cups potatoes, peeled and cubed
- 1 cup cottage cheese
- 2 tablespoons butter
- Salt and pepper to taste
- Optional toppings: Chives, bacon bits, cheese
Instructions
- Begin by boiling the peeled and cubed potatoes in a pot of salted water. Cook until the potatoes are tender—this should take approximately 15 to 20 minutes.
- Once tender, drain the potatoes and return them to the pot.
- Add the cottage cheese and butter to the warm potatoes.
- Use a masher to combine and mash until the mixture is smooth; you can leave it a little chunky if you prefer.
- Season your mashed potatoes with salt and pepper to your liking.
- Serve hot, topping with optional chives, bacon bits, or cheese for an extra flavor boost if desired.
Notes
For a creamier texture, add more cottage cheese or a splash of heavy cream. Consider using hot potatoes to enhance creaminess.
