Ingredients

- 1 cup non-dairy yogurt (plain and unsweetened)
- 2 tablespoons protein powder (optional)
- 1/4 cup cashew butter (or any nut/seed butter)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup (or honey)
- 1 1/2 cups chocolate chips
- 2 tablespoons coconut oil
Instructions
- Combine the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup in a mixing bowl until smooth.
- Fold in the mini chocolate chips to the yogurt mixture evenly.
- Line a baking sheet with parchment paper. Use a cookie scoop to drop dollops of the yogurt mixture onto the prepared sheet.
- Freeze the baking sheet for at least 1 hour until the yogurt bites are completely solid.
- Melting the chocolate chips and coconut oil together in the microwave or over a double boiler until smooth.
- Dip each frozen yogurt bite into the melted chocolate, coating well, and return to the baking sheet.
- Freeze again for another 30 minutes until the chocolate is hardened.
- Enjoy immediately or store in the freezer for later!
Notes
Store in an airtight container in the freezer for up to one month. Let them thaw slightly before eating.
