Description

Delightful morsels that combine cookie dough indulgence with the creaminess of frozen yogurt, perfect for both kids and adults.


Ingredients

Scale
  • 1 cup non-dairy yogurt (plain and unsweetened)
  • 2 tablespoons protein powder (optional)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. Combine the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup in a mixing bowl until smooth.
  2. Fold in the mini chocolate chips to the yogurt mixture evenly.
  3. Line a baking sheet with parchment paper. Use a cookie scoop to drop dollops of the yogurt mixture onto the prepared sheet.
  4. Freeze the baking sheet for at least 1 hour until the yogurt bites are completely solid.
  5. Melting the chocolate chips and coconut oil together in the microwave or over a double boiler until smooth.
  6. Dip each frozen yogurt bite into the melted chocolate, coating well, and return to the baking sheet.
  7. Freeze again for another 30 minutes until the chocolate is hardened.
  8. Enjoy immediately or store in the freezer for later!

Notes

Store in an airtight container in the freezer for up to one month. Let them thaw slightly before eating.
