Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup instant coffee granules
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Mix in the egg and 2 teaspoons of vanilla extract until fully incorporated.
  4. Whisk the flour, baking soda, and salt in a separate bowl. Gradually blend the dry mixture into the wet ingredients until just combined.
  5. Dissolve the instant coffee granules in about 1 tablespoon of hot water and stir into the dough until evenly distributed.
  6. Beat the cream cheese, powdered sugar, and remaining teaspoon of vanilla extract until smooth in a small bowl.
  7. Scoop spoonfuls of cookie dough onto a lined baking sheet. Use your thumb or a spoon to create a small indent in each cookie.
  8. Fill the indent with the cream cheese mixture.
  9. Bake for about 10-12 minutes, until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
