- ½ cup chia seeds
- ¼ cup maple syrup or agave
- 1 tsp vanilla extract
- Juice + zest of 1 lime
- Pinch of salt
- ½ cup plain or coconut yogurt
- 2 tbsp fresh lime juice
- 1 tbsp maple syrup or agave
- 1¼ cups crushed graham crackers or nuts (almonds/cashews)
- ¼ cup coconut oil or melted butter
- 1 tbsp maple syrup or sugar
- Sliced lime, for garnish
- Shredded coconut, for garnish
- Crushed almonds or cashews, for garnish
Instructions
- Make the Crust: In a bowl, mix the crushed graham crackers (or nuts) with melted coconut oil and maple syrup. Press the mixture evenly into a parchment-lined 8×8 pan and chill in the refrigerator for 10–15 minutes.
- Make the Chia Layer: Whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, lime juice, lime zest, and a pinch of salt in a bowl. Let this mixture sit for 10 minutes, whisk it again to break up clumps, and refrigerate for about 4 hours until it’s thick. Once ready, gently spread it evenly over the chilled crust.
- Add the Lime Topping: In a separate bowl, stir together the yogurt, lime juice, and extra maple syrup until smooth. Carefully spread this lime topping over the chia layer.
- Freeze to Set: Freeze the bars for 2–3 hours, or until firm. Once set, slice into bars.
- Garnish & Serve: Top the bars with shredded coconut, lime slices, or chopped nuts for added flair. For the best texture, allow them to thaw for about 10 minutes before serving.
Notes
These bars can be made nut-free by substituting the nut-based crust with crushed graham crackers. Store leftovers in an airtight container in the refrigerator for up to 4-5 days or freeze them for up to a month.
