Description

Ingredients

  • 4 large bell peppers (any color works!)
  • 1 lb ground beef (or turkey for a lighter option)
  • 1 cup cooked rice (brown rice can be a healthy alternative)
  • 1 cup shredded cheese (mozzarella or cheddar adds great flavor)
  • 1 can diced tomatoes (fire-roasted for an extra kick is fantastic)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning (or your favorite herb blend)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds, so they are ready to be filled.
  3. In a large skillet, cook the chopped onion and minced garlic over medium heat until they are soft and fragrant.
  4. Add the ground beef to the skillet. Cook until browned, making sure to drain any excess fat afterwards.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix everything well until combined.
  6. Fill each bell pepper with the beef and rice mixture, generously topping them with shredded cheese.
  7. Arrange the stuffed peppers in a baking dish. Pour a bit of water into the bottom to keep them moist while baking.
  8. Cover with foil and bake for 30 minutes. Then remove the foil and continue baking for an additional 10-15 minutes, until the peppers are tender and the cheese is bubbly and golden.
