Description

A fresh and vibrant salad combining lentils, colorful vegetables, and a zesty dressing, perfect for any occasion.


Ingredients

  • 1 cup lentils, rinsed
  • 2 cups water
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 small red onion, diced
  • 1 cup parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Bring 2 cups of water to a boil in a pot.
  2. Add the rinsed lentils and cook for about 15-20 minutes, or until tender.
  3. Drain the lentils and rinse them under cold water to stop the cooking process.
  4. Combine the lentils with diced bell pepper, cucumber, red onion, and parsley in a large mixing bowl.
  5. Whisk together the olive oil, lemon juice, salt, and pepper in a separate small bowl until well blended.
  6. Pour the dressing over the salad mixture and toss everything together gently to combine.
  7. Serve immediately or refrigerate for later enjoyment.
