Ingredients

- 1 cup lentils, rinsed
- 2 cups water
- 1 bell pepper, diced
- 1 cucumber, diced
- 1 small red onion, diced
- 1 cup parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Bring 2 cups of water to a boil in a pot.
- Add the rinsed lentils and cook for about 15-20 minutes, or until tender.
- Drain the lentils and rinse them under cold water to stop the cooking process.
- Combine the lentils with diced bell pepper, cucumber, red onion, and parsley in a large mixing bowl.
- Whisk together the olive oil, lemon juice, salt, and pepper in a separate small bowl until well blended.
- Pour the dressing over the salad mixture and toss everything together gently to combine.
- Serve immediately or refrigerate for later enjoyment.
