Description

A comforting and quick chicken tortellini soup packed with tender chicken, cheesy tortellini, and vibrant vegetables.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the diced carrots, celery, and minced garlic; sauté until softened, about 3-5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the shredded chicken and cheese tortellini, along with Italian seasoning, salt, and pepper. Cook until the tortellini are tender, about 5-7 minutes.
  5. Add in the spinach and let wilting occur for a minute or two before serving.
  6. Ladle the soup into bowls and top with a sprinkle of grated Parmesan cheese.

Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for 2-3 months.
